low carb cookbooks
Have any of you looked at a low carb cookbook lately? I just got one
for my cousin, she is on the low carb diet and doing quite well with
it. In the local grocery store I saw a low carb slow cooker cookbook.
I got it for her. If you want to see something hilarious, you should
see this. In the back there is a desert section. The two I remember
are peanut butter cookies and pie. This is how you make low carb
peanut butter cookies. Use one cup of chuncky peanut butter, one cup
of bulk splenda, and one large egg. Mix them all together and place on
ungreased cookie sheet. Mash them with a fork to get desired shape and
size. Bake at 350 degrees for ten minutes or until center is not wet.
For some reason she doesn’t think she will try this one. The pie
recipe is better. Use one cup boiling water, ice cubes, sugar free
jello, lite cool whip. Mix the boiling water and jello. Add ice cubes
and remove those which don’t melt. Sound familiar? Then whisk in the
cool whip with a wire wisk until blended. Place in pie pan and
refrigerate. We couldn’t figure out why they didn’t just call it pie
shaped jello. Thought you might like to get as good a laugh out of
this as we did. Have a good evening.
